Venice: Seasoned vegetables

From the garden to the table, local seasonal cuisine in Venice

Venice Lagoon, Sant’Erasmo Island, historically one of the Serenissima Gardens. This island’s products have a distinct flavor, thanks to the brackish soil that imparts flavor to the vegetables, which grow already seasoned! A clayey and hard land, ideal for artichokes, which are actually a Slow Food presidium.

From the garden to the table, we follow the products of a farmer from Sant’Erasmo, Nicola, up to the city, in the direction of Cannaregio, where Samuele cooks only with local and seasonal ingredients in his restaurant “Ogio.” A very close relationship between cuisine and territory, which necessitates a great deal of flexibility and creativity to improve on what is on the market every time.
